Cooking in Corona Days- With Karni Tomer Food Explorer Chinese Spring Rolls

 

Hi, I’m Karni Tomer Food Explorer,

Food explorer and owner of a food tours company in Singapore.

In Singapore, the Corona sneaked into our lives in late January at the height of the Chinese New Year celebrations.

We went through very stressful days accompanied by loss of income, fear of the unknown, psychosomatic illnesses and daily counts of patients.

Today the situation is under control but the virus has not disappeared. In the meantime, I am sad to see how the virus has spread to the world and to Israel in particular.

In my opinion, the best therapy is food.

Cooking and feeding you is the best gift I can give you.

Every day, I will publish a Western or Asian recipe that will delight your heart and inspire you to cook at home.

The best Spring rolls, just like the ones you love to eat in a Chinese restaurant

The perfect skin will be Wanton skin wrappers, but if you prefer gluten free Spring Rolls you can use Vietnamese rice paper

Spring rolls filling:

1-2 cups shredded cabbage

Half a cup thin carrots stick

One sliced onion

1-2 tbsp light Soy sauce

In a wok:

Add 1- 2 tbsp of oil

First add the onion, then the cabbage and carrots. You can add some bean sprouts.

Stir and fry for 2 min, add 1-2 tbsp of soy sauce

Add salt and pepper

Make sure the vegetables are not too soft, keep them crunchy.

Then:

Let the filling cool

Place the wanton skin on a plate

Fold the spring rolls and fry in deep oil.

You can also freeze them and fry only  before dinner.

Add on: sliced chicken breast, vermicelli noodles, garlic, ginger and spring onions

 

Vegetarian Noodles:

Ingredients for the noodles

2 chopped garlic cloves

Half a cup sliced cabbage

Chopped carrots sticks from 2 carrots

Wheat noodles – boil the noodles till they are almost cooked. Follow the instructions on the bag but make sure to drain the noodles for one minute before they are fully cooked

1 tbsp Light soy sauce and 1 tbsp dark soy sauce

A pinch of sugar and salt if needed

 

How to fry the Noodles

Fry the garlic in the vegetable oil, be careful not to burn it .

Add the cabbage and carrots and keep stirring and frying

Add the noodles and fry one more minute.

Add the soy sauce and a bit salt and pepper.

Serve with a smile and enjoy!
